Ingredients
For the Beef Tips:
-
1 ½ lbs beef stew meat or beef tips
-
1 small onion, chopped
-
2 cloves garlic, minced
-
1 packet onion soup mix (or 1 tbsp onion powder)
-
1 can (10.5 oz) cream of mushroom soup
-
1 cup beef broth (or water)
-
1 tbsp Worcestershire sauce
-
1 tsp dried thyme
-
Salt and freshly ground black pepper, to taste
For the Noodles:
-
12 oz egg noodles (or any pasta of your choice)
-
Salt for pasta water (optional)
Instructions
1️⃣ Prepare the Beef:
Place the beef stew meat or beef tips in the bottom of the crockpot. Add the chopped onion and minced garlic.
2️⃣ Make the Sauce:
In a medium bowl, combine the onion soup mix, cream of mushroom soup, beef broth, Worcestershire sauce, dried thyme, salt, and pepper. Pour this mixture over the beef and onions in the crockpot. Stir to combine.
3️⃣ Cook in the Crockpot:
Cover the crockpot and cook on low for 6-8 hours or on high for 4 hours, until the beef is tender and the sauce has thickened.
4️⃣ Add the Noodles:
About 30 minutes before serving, stir in the uncooked egg noodles (or pasta) into the crockpot, making sure they’re submerged in the sauce. If needed, add a little more beef broth or water to ensure the noodles cook properly. Cover and cook for the final 30 minutes, or until the noodles are tender.
5️⃣ Serve:
Once the noodles are cooked and the beef is tender, give everything a good stir. Taste and adjust seasoning if necessary. Serve hot and enjoy!
