  • Author: Naomi
  • Total Time: 2 hours 10 minutes - 5 hours 10 minutes

Description

This Crockpot Chicken Fajitas recipe combines chicken breasts, vibrant bell peppers, onions, and a savory blend of spices, all cooked in the slow cooker for maximum flavor and minimal effort. Perfect for tacos, burritos, or serving over rice, this dish is versatile, healthy, and incredibly easy to make!

Ingredients

Scale
  • 4 boneless, skinless chicken breasts

  • 2 bell peppers (red, green, yellow, or a mix), sliced

  • 1 large onion, sliced

  • 1 packet fajita seasoning (or homemade blend: 1 tsp chili powder, 1 tsp cumin, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp smoked paprika, salt and pepper to taste)

  • 1/4 cup lime juice (about 2 limes)

  • 1 tablespoon olive oil (optional for extra richness)

  • 1/4 cup chicken broth (or water)

  • Salt and pepper, to taste

  • Tortillas, for serving

  • Optional toppings: sour cream, guacamole, shredded cheese, salsa, cilantro

Instructions

1️⃣ Prepare the Ingredients:

  • Slice the bell peppers and onion into thin strips. Set aside.

2️⃣ Season the Chicken:

  • Place the chicken breasts in the bottom of the crockpot. Sprinkle the fajita seasoning evenly over the chicken. Add salt and pepper to taste.

3️⃣ Add Vegetables and Liquid:

  • Add the sliced bell peppers and onions on top of the chicken. Pour the lime juice and chicken broth over the top. Drizzle with olive oil if using for extra richness.

4️⃣ Cook in the Crockpot:

  • Cover the crockpot and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is fully cooked and tender. The chicken should shred easily with a fork when done.

5️⃣ Shred the Chicken:

  • Once the chicken is cooked, remove it from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot and mix it with the cooked peppers and onions. Let it cook for another 10-15 minutes to absorb the flavors.

6️⃣ Serve:

  • Serve the chicken fajitas with warm tortillas and your favorite toppings, such as sour cream, guacamole, shredded cheese, salsa, or cilantro.

Notes

  • Make it Spicy: If you like some heat, add diced jalapeños or a dash of cayenne pepper to the seasoning mix.

  • Substitute for Chicken: You can use chicken thighs for a juicier, more flavorful option, or swap for shrimp or beef for a different take on fajitas.

  • Vegetarian Option: Skip the chicken and use black beans or tofu as a protein base for a vegetarian version.

  • Toppings: Customize with your favorite fajita toppings like fresh avocado, shredded lettuce, or a squeeze of extra lime.

  • Meal Prep: This recipe is great for meal prep! Store leftovers in an airtight container in the fridge for up to 3 days. It also freezes well for future meals.
