The Easy Hamburger Rice Casserole is a quintessential comfort dish that combines the heartiness of ground beef with the simplicity of rice, all baked together in a savory blend of French onion soup and beef consomme. Topped with slices of butter that melt into the mixture, this casserole is a testament to the delicious outcomes of simple ingredients coming together. Perfect for busy weeknights, family dinners, or whenever the craving for something warm and comforting strikes, this casserole is sure to satisfy.

Ingredients

Scale
  • 1 pound ground beef
  • 2 cups (370 g) long-grain white rice, uncooked
  • 2 cans (10.5 ounces each) French onion soup
  • 2 cans (10.5 ounces each) beef consomme
  • ½ cup (1 stick / 113 g) unsalted butter, sliced into pats
  • Chopped chives, for garnish (optional)

Instructions

  1. Preheat the oven to 425°F. Spray a 9×13-inch baking dish with nonstick cooking spray.
  2. Brown the ground beef in a medium skillet over medium heat until no longer pink, about 8-10 minutes. Drain any excess grease.
  3. Layer the cooked ground beef in the prepared baking dish. Top evenly with the uncooked rice.
  4. Pour the French onion soup and beef consomme over the rice and beef layers. Stir gently to combine.
  5. Distribute the slices of butter evenly over the top of the rice mixture.
  6. Cover the dish with aluminum foil and bake for 30 minutes. Then, remove the foil and continue to bake, uncovered, for an additional 30 minutes, or until the rice is fully cooked and tender.
  7. Garnish with chopped chives before serving, if desired.

Notes

  • Substitutions: Ground turkey can be used in place of ground beef for a lighter version. For a vegetarian twist, consider using a plant-based ground meat substitute and vegetable broth.
  • Rice Varieties: Jasmine or basmati rice is recommended for their ability to cook up fluffy and separate. Adjust liquid and cooking times if substituting with brown rice.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months. Reheat in the oven or microwave until thoroughly warmed.
  • Serving Suggestions: Pair with a side of roasted vegetables or a crisp salad for a balanced meal. A medium-bodied red wine complements the rich flavors of the casserole beautifully.
