For the pie:

  • 1 (9-inch) prepared graham cracker pie crust

  • 1 (8 oz) package cream cheese, softened

  • 1 (14 oz) can sweetened condensed milk

  • 1 (8 oz) container whipped topping (Cool Whip), thawed

  • 1 (20 oz) can crushed pineapple, drained

  • ½ cup chopped maraschino cherries (plus extra for garnish)

  • ½ cup sweetened shredded coconut

  • ½ cup chopped pecans or walnuts

  • 2 tbsp lemon juice

For garnish (optional):

  • Additional whipped topping

  • Maraschino cherries

  • Chopped pecans


Instructions

1️⃣ Prepare the filling:
In a large bowl, beat the softened cream cheese until smooth. Add sweetened condensed milk and lemon juice, and continue mixing until well combined and creamy.

2️⃣ Fold in the add-ins:
Gently fold in the drained crushed pineapple, chopped cherries, shredded coconut, chopped pecans, and whipped topping until fully incorporated.

3️⃣ Fill the pie crust:
Spoon the mixture into the prepared graham cracker crust, smoothing the top with a spatula.

4️⃣ Chill:
Refrigerate for at least 4 hours or overnight to set.

5️⃣ Garnish and serve:
Before serving, top with additional whipped topping, cherries, and chopped pecans if desired. Serve chilled.

Notes

  • Be sure to drain the pineapple well to avoid a runny filling.

  • You can substitute walnuts or leave out the nuts if you prefer a nut-free version.

  • This pie can also be frozen for a firmer, frozen pie — simply thaw slightly before serving.
