Description

Rhubarb is one of spring’s brightest and most underrated stars! These two easy recipes — a tender Rhubarb Loaf and melt-in-your-mouth Rhubarb Bars — are perfect for showcasing rhubarb’s sweet-tart flavor. Simple, delicious, and perfect for breakfast, dessert, or an afternoon treat.

Ingredients

Scale
  • 2 cups all-purpose flour

  • 1 ½ teaspoons baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 1 cup granulated sugar

  • ½ cup vegetable oil

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 cup sour cream or Greek yogurt

  • 1 ½ cups chopped fresh rhubarb

  • ½ cup chopped walnuts or pecans (optional)

Instructions

1️⃣ Preheat the oven:
Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.

2️⃣ Mix dry ingredients:
In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

3️⃣ Mix wet ingredients:
In a large bowl, beat together sugar, oil, eggs, vanilla, and sour cream until smooth.

4️⃣ Combine:
Gradually stir the dry ingredients into the wet mixture until just combined. Gently fold in chopped rhubarb and nuts, if using.

5️⃣ Bake:
Pour batter into the prepared loaf pan. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.

6️⃣ Cool and serve:
Allow loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Sour cream keeps the loaf moist and tender.

  • Freezes well — wrap tightly and store up to 3 months.
