Ingredients
-
8 oz spaghetti or linguine
-
1 lb large shrimp, peeled and deveined
-
2 tbsp olive oil
-
3 tbsp butter
-
4 garlic cloves, minced
-
½ tsp red pepper flakes (optional)
-
Juice of 1 lemon
-
Salt and pepper to taste
-
2 tbsp chopped parsley
-
Grated Parmesan cheese (optional, for topping)
Instructions
1️⃣ Cook the pasta: In salted boiling water, cook pasta until al dente. Reserve ½ cup pasta water, then drain and set aside.
2️⃣ Sauté the shrimp: Pat shrimp dry and season with salt and pepper. In a large skillet, heat olive oil over medium-high. Add shrimp in a single layer and cook 1–2 minutes per side until pink and opaque. Remove and set aside.
3️⃣ Make the sauce: Reduce heat to medium. Add butter to the same skillet and melt. Stir in garlic and red pepper flakes. Cook 1 minute until fragrant.
4️⃣ Combine: Return shrimp to the skillet, add lemon juice, and toss to coat. Add cooked pasta and a splash of reserved pasta water to loosen the sauce if needed.
5️⃣ Finish and serve: Toss with chopped parsley and Parmesan. Serve immediately with extra lemon wedges if desired.
