For the sloppy joe filling:

  • 1 lb ground beef (or ground turkey)

  • 1 small onion, finely chopped

  • 1 green bell pepper, chopped (optional)

  • 2 cloves garlic, minced

  • ¾ cup ketchup

  • 2 tbsp tomato paste

  • 1 tbsp Worcestershire sauce

  • 1 tbsp brown sugar

  • 1 tsp mustard

  • Salt and pepper to taste

For assembling the casserole:

  • 3 cups cooked elbow macaroni (or any short pasta)

  • 1 ½ cups shredded cheddar cheese

  • ½ cup shredded mozzarella cheese

  • ½ cup sour cream

  • 2 tbsp chopped fresh parsley (optional for garnish)


Instructions

1️⃣ Preheat the oven:
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

2️⃣ Cook the pasta:
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.

3️⃣ Make the sloppy joe filling:
In a large skillet over medium heat, cook the ground beef, onion, and bell pepper until the meat is browned and vegetables are tender. Drain any excess fat.

4️⃣ Add the sauce ingredients:
Stir in garlic, ketchup, tomato paste, Worcestershire sauce, brown sugar, mustard, salt, and pepper. Simmer for 3-5 minutes until thickened and heated through.

5️⃣ Combine with pasta:
In a large mixing bowl, combine the cooked pasta, sloppy joe mixture, and sour cream. Stir until well combined.

6️⃣ Assemble the casserole:
Pour the mixture into the prepared baking dish. Sprinkle cheddar and mozzarella cheese evenly over the top.

7️⃣ Bake:
Bake uncovered for 20-25 minutes, or until cheese is melted and bubbly.

8️⃣ Garnish and serve:
Let cool slightly before serving. Garnish with chopped parsley if desired.

Notes

  • You can substitute tater tots or biscuit dough for the pasta to switch things up.
