Ingredients

For the cake:

  • 1 box (14.4 oz) graham crackers
  • 2 packages (3.4 oz each) instant vanilla pudding mix
  • 3 cups cold milk
  • 1 container (8 oz) whipped topping (like Cool Whip), thawed

For the chocolate topping:

  • 1/2 cup semisweet chocolate chips
  • 1/4 cup heavy cream
  • 2 tablespoons light corn syrup
  • 2 tablespoons butter

Instructions

In a large bowl, whisk together the instant pudding mix and cold milk until smooth and thickened.

Fold in the whipped topping until fully combined and set aside.

In a 9×13 inch baking dish, arrange a single layer of graham crackers on the bottom.

Spread half of the pudding mixture over the graham crackers.

Add another layer of graham crackers on top of the pudding mixture.

Spread the remaining pudding mixture over the second layer of graham crackers.

Top with one final layer of graham crackers.

In a small saucepan, combine chocolate chips, heavy cream, corn syrup, and butter. Heat over low, stirring constantly, until the mixture is smooth and glossy.

Pour the warm chocolate topping over the top layer of graham crackers and spread evenly.

Refrigerate the cake for at least 6 hours or overnight to allow the crackers to soften.

Slice and serve chilled.

Notes

  • Use cold milk to ensure the pudding sets properly. Warm or room-temp milk won’t give the right consistency.
