  • Author: Naomi
  • Total Time: 1 hr 20 min

Description

A show-stopping layered dessert that combines fudgy brownies, tangy vanilla pudding, vibrant green whipped cream, and crunchy shamrock sprinkles. Perfect for celebrating St. Patrick’s Day with a burst of chocolatey sweetness and festive flair!

Ingredients

Scale

For the brownie layer:

  • 1 batch (about 9×13″) of your favorite brownies, cooled and cut into 1″ cubes

    • (Store-bought or homemade—see notes for a shortcut!)

For the vanilla pudding layer:

  • 2 cups whole milk

  • 1 package (3.4 oz) instant vanilla pudding mix

For the green whipped cream layer:

  • 2 cups heavy whipping cream, cold

  • ¼ cup powdered sugar

  • ½ tsp vanilla extract

  • Green food coloring (gel or liquid), a few drops

For assembly & garnish:

  • ½ cup mini chocolate chips or chopped white chocolate

  • 2 tbsp crushed peppermint candies or crushed Andes mints

  • Green and gold shamrock sprinkles

Instructions

1️⃣ Prepare the pudding. In a medium bowl, whisk together the milk and instant vanilla pudding mix until smooth and thickened (about 2 minutes). Cover and chill in the fridge for at least 5 minutes.

2️⃣ Make the green whipped cream. In a large bowl, combine cold heavy cream, powdered sugar, and vanilla extract. Using a hand mixer, whip on medium speed until soft peaks form. Add green food coloring a drop at a time until you reach a vivid pastel green, then whip briefly to incorporate.

3️⃣ Cube the brownies. If you haven’t already, cut your cooled brownies into 1″ cubes. Reserve about 1 cup of cubes for the top garnish.

4️⃣ Layer the trifle. In a large clear trifle bowl (or individual parfait glasses), arrange layers in the following order:

  • a) 1⁄3 of the brownie cubes

  • b) half of the vanilla pudding

  • c) half of the green whipped cream

  • d) sprinkle of mini chocolate chips and crushed peppermint

Repeat once more (brownies → pudding → whipped cream → chips & peppermint).

5️⃣ Finish & garnish. Top with the reserved brownie cubes, extra whipped cream (pipe on if desired), and a generous scattering of shamrock sprinkles, more chocolate chips, and crushed mint candies.

6️⃣ Chill & serve. Cover loosely and refrigerate for at least 1 hour to allow layers to meld. Scoop or spoon into bowls or plates and enjoy!

Notes

  • Shortcut brownies: Use a store-bought brownie mix or bakery brownies to save time.

  • Dairy-free option: Swap in coconut-based “whipping cream” and dairy-free instant pudding.

  • Make-ahead tips: Assemble up to 4 hours ahead; add fresh garnishes just before serving to keep sprinkles crisp.

  • Flavor twists: Layer in thin slices of fresh strawberries or mint leaves for extra color and brightness.

  • Storage: Cover and refrigerate for up to 2 days. The whipped cream may soften the brownies over time, so store sprinkles separately if possible.
