  • 2 tablespoons olive oil

  • 1/2 cup beef broth (or vegetable broth for a vegetarian version)

  • 1 cup shredded Gruyère cheese (or Swiss cheese, or mozzarella)

  • 1/2 cup shredded cheddar cheese (optional, for added cheesiness)

  • Fresh parsley, chopped (optional, for garnish)


Instructions

1️⃣ Prepare the Potatoes:

  • Preheat your oven to 400°F (200°C).

  • Scrub the russet potatoes clean, then poke several holes in each potato with a fork. Rub the potatoes with olive oil and season them lightly with salt and pepper.

  • Place the potatoes directly on the oven rack or on a baking sheet, and bake for 45-60 minutes, or until the potatoes are tender and easily pierced with a fork.

2️⃣ Caramelize the Onions:

  • While the potatoes are baking, heat 2 tablespoons of butter and 2 tablespoons of olive oil in a large skillet over medium heat.

  • Add the sliced onions and cook, stirring occasionally, for 15-20 minutes until they are softened and golden brown (caramelized).

  • Once the onions are caramelized, stir in the fresh thyme, and season with salt and pepper to taste.

  • Pour in the beef or vegetable broth and let it simmer for an additional 2-3 minutes to allow the flavors to meld. Remove from heat.

3️⃣ Assemble the Baked Potatoes:

  • Once the potatoes are done baking, remove them from the oven and let them cool slightly.

  • Cut a slit down the center of each potato, then gently fluff the inside of the potato with a fork.

  • Spoon the caramelized onion mixture over the top of each potato, spreading it evenly.

4️⃣ Add the Cheese:

  • Sprinkle the shredded Gruyère and cheddar cheese over the onions.

  • Return the potatoes to the oven for 5-7 minutes, or until the cheese is melted and bubbly.

5️⃣ Serve and Enjoy:

  • Once the cheese is melted, remove the potatoes from the oven and sprinkle with fresh parsley for garnish, if desired.
