Instructions
1️⃣ Prepare the Potatoes:

Preheat your oven to 400°F (200°C).

Scrub the russet potatoes clean, then poke several holes in each potato with a fork. Rub the potatoes with olive oil and season them lightly with salt and pepper.

Place the potatoes directly on the oven rack or on a baking sheet, and bake for 45-60 minutes, or until the potatoes are tender and easily pierced with a fork.

While the potatoes are baking, heat 2 tablespoons of butter and 2 tablespoons of olive oil in a large skillet over medium heat.

Add the sliced onions and cook, stirring occasionally, for 15-20 minutes until they are softened and golden brown (caramelized).

Once the onions are caramelized, stir in the fresh thyme, and season with salt and pepper to taste.
