  • 1⁄2 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 stick butter, divided
  • 2 tablespoons minced garlic
  • 1⁄4 teaspoon red pepper flakes
  • 1 1⁄2 teaspoons salt, divided
  • 1⁄2 cup dry white wine
  • 1 1⁄2 cups uncooked white rice
  • 3 cups chicken broth
  • 1⁄2 cup fresh grated Parmesan cheese

Instructions

  • Season the Chicken: Pat chicken tenderloins dry, then season both sides with salt, pepper, and garlic powder.
  • Cook the Chicken: Heat olive oil in a large nonstick skillet over medium heat. Add the chicken and cook for 3-4 minutes on each side until browned and fully cooked through. Remove from skillet, cover, and set aside.
  • Make the Garlic Butter Sauce: In the same skillet, melt 1 stick of butter over medium-low heat. Add minced garlic, red pepper flakes, and 1/2 teaspoon salt. Sauté for 3 minutes, ensuring the garlic doesn’t burn. Increase heat to medium-high and add white wine, stirring to combine. Cook for about 5 minutes until the mixture reduces by half. Reserve 2 tablespoons of sauce.
  • Cook the Parmesan Rice: Add rice to the skillet and stir for 3-4 minutes until it starts to brown. Pour in chicken broth and the remaining 1 teaspoon of salt. Bring to a low boil, then reduce heat to medium-low, cover, and cook for 20 minutes, stirring occasionally. When done, sprinkle Parmesan over the rice and fluff gently.
  • Final Assembly: Place the cooked chicken on top of the rice and drizzle with the reserved garlic butter sauce. Cover, remove from heat, and let stand for 5 minutes before serving. Garnish with additional Parmesan and fresh parsley, if desired.
