Description

A hearty and creamy one-dish dinner, Hamburger Rice Casserole blends savory ground beef, tender rice, and creamy soup into the ultimate comfort food bake. Perfect for busy weeknights, potlucks, or meal prep, this classic casserole is endlessly adaptable and always satisfying.

Ingredients

Scale
  • 1 lb ground beef (use lean beef if possible)
  • 1 small onion, chopped
  • 1 cup uncooked white rice
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of chicken soup
  • 1 1/2 cups water or beef broth
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese (optional)

Instructions

Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

In a large skillet over medium heat, cook the ground beef and chopped onion until the meat is browned and the onion is soft. Drain excess fat.

In a large bowl, combine the uncooked rice, cream of mushroom soup, cream of chicken soup, water or broth, garlic powder, onion powder, salt, and pepper. Mix well.

Add the cooked ground beef and onion mixture to the bowl and stir until evenly combined.

Pour the mixture into the prepared baking dish and spread it out evenly.

Cover the dish tightly with aluminum foil and bake for 60 to 70 minutes, or until the rice is tender and most of the liquid is absorbed.

Remove the foil and, if using cheese, sprinkle it over the top. Return to the oven uncovered and bake for another 5 to 10 minutes until the cheese is melted.

Let it rest for a few minutes before serving.

Notes

  • Meat Swap: Use ground turkey or chicken for a lighter version.

  • Soup Options: Sub cream of celery for mushroom or chicken for a different flavor.

  • Cheese Add-Ins: Mix cheese into the base for extra richness, or melt it on top for a golden finish.

  • Veggie Boost: Add sautéed vegetables like mushrooms, spinach, or bell peppers for added nutrients.

  • Make-Ahead: Assemble up to 24 hours in advance and bake when ready.

  • Freezer Friendly: Freeze before baking for best results. Thaw overnight before baking.

  • Rice Choices: Stick to long-grain rice to prevent sogginess. Brown rice needs extra liquid and time.

  • Season to Taste: Start light and adjust seasoning after baking if needed.
