This Hobo Casserole is a rustic, stick-to-your-ribs dish made with layers of seasoned ground beef, tender potatoes, and creamy cheese sauce. It’s the ultimate budget-friendly, family-approved comfort food!


Ingredients

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 4 medium russet potatoes, thinly sliced

  • 1 can (10.5 oz) cream of mushroom soup

  • ½ cup milk

  • 1½ cups shredded cheddar cheese

  • Salt and pepper to taste

  • 1 tsp Italian seasoning (optional)

  • 2 tbsp chopped parsley (for garnish)


Instructions

1️⃣ Preheat oven: Preheat to 375°F (190°C) and grease a 9×13-inch baking dish.

2️⃣ Cook the beef: In a skillet over medium heat, cook ground beef and onion until browned. Add garlic, salt, pepper, and Italian seasoning. Drain any excess grease.

3️⃣ Make the sauce: In a bowl, whisk together cream of mushroom soup and milk until smooth.

4️⃣ Layer the casserole: In the baking dish, layer half of the sliced potatoes, then half of the beef, followed by half of the soup mixture and a sprinkle of cheese. Repeat the layers.

5️⃣ Cover and bake: Cover with foil and bake for 45–50 minutes, until potatoes are tender.

6️⃣ Uncover and finish: Remove foil, top with remaining cheese, and bake uncovered for another 10–15 minutes until bubbly and golden.

7️⃣ Garnish and serve: Let rest for 5 minutes, then sprinkle with fresh parsley and serve warm.
