Ingredients
For the cake:
- 1 box vanilla cake mix (or homemade vanilla cake batter)
- 3 large eggs
- 1/2 cup vegetable oil
- 1 cup water
- 1 teaspoon vanilla extract
For the pineapple filling:
- 1 can (20 oz) crushed pineapple, drained
- 1/2 cup shredded coconut (optional)
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
For the frosting:
- 8 oz cream cheese, softened
- 1/2 cup butter, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
1️⃣ Preheat the oven: Set your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans to prevent sticking.
2️⃣ Prepare the cake batter: Follow the instructions on the cake mix box to prepare the batter. Typically, this involves combining the cake mix with eggs, vegetable oil, water, and vanilla extract. Pour the batter evenly into the prepared cake pans.
3️⃣ Bake the cakes: Bake the cakes for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
4️⃣ Prepare the pineapple filling: In a small saucepan, combine the drained crushed pineapple, shredded coconut (optional), sugar, and cornstarch. Heat the mixture over medium heat, stirring constantly until it thickens. Once thickened, remove from heat and set aside to cool.
5️⃣ Assemble the cake layers: Once the cakes have completely cooled, place one cake layer on a serving platter. Spread the cooled pineapple filling evenly over the top of the first layer.
6️⃣ Add the second cake layer: Place the second cake layer on top of the pineapple filling and press gently to secure.
7️⃣ Make the frosting: Beat together the softened cream cheese and butter until smooth and creamy. Gradually add the powdered sugar and vanilla extract, and continue to beat until the frosting is fluffy and well combined.
8️⃣ Frost the cake: Frost the top and sides of the cake with the cream cheese frosting, smoothing it out as evenly as possible.
9️⃣ Chill and serve: Refrigerate the cake for at least an hour to allow the flavors to meld together. This helps the frosting set and makes it easier to slice.
