Ingredients

  • 4 cups chopped cooked chicken
  • 4 cups cooked rice
  • 4– oz cream cheese, room temperature
  • 1 cup cottage cheese
  • ½ cup sour cream
  • 1 (10.5-oz) can Cream of Chicken Soup
  • ¼ tsp garlic powder
  • ¼ tsp dried onion powder
  • 1 sleeve Ritz crackers crushed
  • 5 Tbsp salted butter melted
  • Salt and pepper to taste

Instructions

  1. Preheat: Heat oven to 350ºF. Spray a 9×13-inch dish with cooking spray.
  2. Mix & Spread: Blend chicken, rice, cream cheese, cottage cheese, sour cream, spices, and soup. Put in dish.
  3. Top: Mix crackers and butter, sprinkle over mix.
  4. Bake: Cook 30-40 mins until bubbly.

Notes

  • Make-Ahead: Prepare the casserole up to a day in advance and refrigerate. Add the cracker topping just before baking.
