Ingredients
For the pumpkin bars:
- 4 large eggs
- 1⅔ cups granulated sugar
- 1 cup vegetable oil
- 1 (15 oz) can pumpkin puree
- 2 cups all-purpose flour
- 2 tsp baking powder
- 2 tsp ground cinnamon
- 1 tsp baking soda
- ½ tsp salt
For the cream cheese frosting:
- 8 oz cream cheese, softened
- ½ cup unsalted butter, softened
- 2 cups powdered sugar

Instructions
- Preheat oven to 350°F (175°C).
Grease or line a 9×13-inch baking pan with parchment paper. - Make the pumpkin bar batter.
In a large mixing bowl, beat the eggs, sugar, oil, and pumpkin puree until smooth and well combined. - Combine the dry ingredients.
In a separate bowl, whisk together flour, baking powder, cinnamon, baking soda, and salt. - Mix wet and dry ingredients.
Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated and smooth. - Bake.
Pour the batter into the prepared baking pan and spread evenly. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean. Let the bars cool completely in the pan. - Prepare the frosting.
In a medium bowl, beat the softened cream cheese and butter together until smooth. Add the powdered sugar and vanilla extract, and beat until light and fluffy. - Frost the bars.
Spread the cream cheese frosting evenly over the cooled pumpkin bars. - Cut and serve.
Slice into squares or rectangles and serve. Store leftovers in the refrigerator.
