Description

This creamy, cheesy pasta dish is a perfect comfort meal with a delightful blend of mozzarella and white cheddar. The combination of savory tomatoes, aromatic herbs, and melted cheese makes for a rich and satisfying meal. Quick and easy, it’s ideal for a weeknight dinner!

Ingredients

Scale
  • 12 oz penne pasta (or any pasta of choice)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes, drained
  • 2 cups vegetable or chicken broth
  • 1 cup milk
  • 1 cup shredded white cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

1️⃣ Heat the oil and garlic: Heat olive oil in a large skillet or pan over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant.

2️⃣ Add liquids and tomatoes: Stir in the diced tomatoes, broth, and milk, then bring to a simmer.

3️⃣ Cook the pasta: Add uncooked pasta to the skillet, stirring to coat it in the liquid. Cover with a lid and cook for 12-15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.

4️⃣ Melt the cheese: Once the pasta is cooked, reduce the heat to low. Add shredded white cheddar and mozzarella cheeses, stirring until melted and creamy.

5️⃣ Season: Stir in dried basil, oregano, and red pepper flakes (if using). Season with salt and pepper to taste.

6️⃣ Garnish and serve: Remove from heat and garnish with fresh basil, if desired. Serve immediately.

Notes

  • Optional protein: Add grilled chicken or sautéed shrimp for a protein-packed meal.

  • Extra flavor: If you prefer a tangy twist, a dash of lemon juice or a sprinkle of Parmesan cheese can elevate the dish.

  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
