Ingredients
- 12 oz penne pasta (or any pasta of choice)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes, drained
- 2 cups vegetable or chicken broth
- 1 cup milk
- 1 cup shredded white cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
1️⃣ Heat the oil and garlic: Heat olive oil in a large skillet or pan over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant.
2️⃣ Add liquids and tomatoes: Stir in the diced tomatoes, broth, and milk, then bring to a simmer.
3️⃣ Cook the pasta: Add uncooked pasta to the skillet, stirring to coat it in the liquid. Cover with a lid and cook for 12-15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
4️⃣ Melt the cheese: Once the pasta is cooked, reduce the heat to low. Add shredded white cheddar and mozzarella cheeses, stirring until melted and creamy.
5️⃣ Season: Stir in dried basil, oregano, and red pepper flakes (if using). Season with salt and pepper to taste.
6️⃣ Garnish and serve: Remove from heat and garnish with fresh basil, if desired. Serve immediately.
