  • 1/3 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup key lime juice (freshly squeezed)
  • 1 teaspoon lime zest
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • Lime zest for garnish

Optional Substitutions:

  • For a gluten-free crust, use gluten-free graham cracker crumbs.
  • Substitute coconut milk for sweetened condensed milk to make it dairy-free, though the flavor will slightly change.

Instructions

  1. Prepare the Crust: In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture firmly into the bottoms and up the sides of a mini tart pan. Refrigerate for at least 1 hour to set.
  2. Make the Filling: In a large bowl, whisk together sweetened condensed milk, key lime juice, and lime zest until smooth and thick. Spoon the filling into the chilled crusts, smoothing the tops with a spatula.
  3. Whip the Cream: In a separate bowl, whip the heavy cream and powdered sugar together until stiff peaks form. Pipe or spoon the whipped cream onto each mini tart.
  4. Garnish and Set: Garnish with additional lime zest. Refrigerate for at least 2 hours before serving to allow the pies to set.
