Ingredients
Scale
- 1 1/2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 1 can (14 ounces) sweetened condensed milk
- 1/2 cup key lime juice (freshly squeezed)
- 1 teaspoon lime zest
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- Lime zest for garnish
Optional Substitutions:
- For a gluten-free crust, use gluten-free graham cracker crumbs.
- Substitute coconut milk for sweetened condensed milk to make it dairy-free, though the flavor will slightly change.
Instructions
- Prepare the Crust: In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture firmly into the bottoms and up the sides of a mini tart pan. Refrigerate for at least 1 hour to set.
- Make the Filling: In a large bowl, whisk together sweetened condensed milk, key lime juice, and lime zest until smooth and thick. Spoon the filling into the chilled crusts, smoothing the tops with a spatula.
- Whip the Cream: In a separate bowl, whip the heavy cream and powdered sugar together until stiff peaks form. Pipe or spoon the whipped cream onto each mini tart.
- Garnish and Set: Garnish with additional lime zest. Refrigerate for at least 2 hours before serving to allow the pies to set.
Notes
- Make-Ahead Tip: Prepare the pies a day before and refrigerate for enhanced flavor and easier serving.
- Ingredient Flexibility: Substitute regular limes if key limes are unavailable, and adapt to gluten-free or dairy-free options as needed.
