Description

These Peach Cobbler Cheesecake Bars combine the best of two dessert worlds—creamy, tangy cheesecake and sweet, spiced peach cobbler. With a buttery graham cracker crust, a luscious cheesecake layer, juicy peaches, and a crumbly cinnamon topping, each bite is a perfect harmony of textures and flavors. They’re an irresistible treat for summer picnics, holiday dinners, or whenever you’re craving a cozy dessert with a fruity twist.

Ingredients

Scale

For the crust:

  • 1 ½ cups graham cracker crumbs

  • ¼ cup granulated sugar

  • ½ cup unsalted butter, melted

For the cheesecake layer:

  • 2 (8 oz) packages cream cheese, softened

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

For the peach topping:

  • 2 cups fresh or canned peaches, diced

  • ¼ cup brown sugar

  • 1 tsp cinnamon

  • ½ tsp nutmeg

  • 1 tbsp cornstarch

  • 1 tbsp lemon juice

For the crumble topping:

  • ½ cup all-purpose flour

  • ¼ cup brown sugar

  • ¼ cup cold butter, cubed

  • ½ tsp cinnamon

Instructions

1️⃣ Preheat the oven: Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.

2️⃣ Make the crust: In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press firmly into the bottom of the prepared pan. Bake for 8–10 minutes, then set aside to cool slightly.

3️⃣ Prepare the cheesecake layer: In a large bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla. Pour over the crust and smooth the top.

4️⃣ Make the peach topping: In a medium saucepan over medium heat, combine peaches, brown sugar, cinnamon, nutmeg, cornstarch, and lemon juice. Cook for 5–7 minutes until thickened. Let cool slightly, then spoon over the cheesecake layer.

5️⃣ Add the crumble topping: In a small bowl, combine flour, brown sugar, and cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs. Sprinkle evenly over the peach layer.

6️⃣ Bake: Bake for 35–40 minutes, or until the center is set and the top is lightly golden. Cool to room temperature, then refrigerate for at least 3 hours before slicing.

Notes

  • Fresh or canned peaches: Both work well—just drain canned peaches thoroughly to avoid excess moisture.

  • Make ahead: These bars need chilling time, so they’re perfect to prepare a day in advance.

  • Serving tip: For cleaner slices, use a sharp knife and wipe it clean between each cut.
