  • 2 cups cooked, shredded chicken

  • 1 ½ cups prepared queso dip (store-bought or homemade)

  • 1 cup shredded cheddar or Mexican blend cheese

  • 1 (10-ounce) can enchilada sauce

  • 8 small flour or corn tortillas

  • 1 teaspoon chili powder

  • ½ teaspoon cumin

  • ½ teaspoon garlic powder

  • Salt and pepper, to taste

  • Chopped cilantro or green onions, for garnish (optional)

Instructions:

Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

In a mixing bowl, combine shredded chicken, half of the queso dip, chili powder, cumin, garlic powder, and a pinch of salt and pepper. Stir until well combined.

Warm the tortillas slightly to make them easier to roll. Place a spoonful of the chicken mixture in the center of each tortilla, roll tightly, and place seam-side down in the baking dish.

Pour the enchilada sauce evenly over the rolled tortillas.

Drizzle the remaining queso over the top, then sprinkle with shredded cheese.

Bake for 20–25 minutes, or until the cheese is melted and bubbly.

Garnish with chopped cilantro or green onions if desired. Serve warm.
