Ingredients
For the salad:

1 lb cooked shrimp, peeled and deveined

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1 small cucumber, diced

¼ red onion, thinly sliced

¼ cup chopped fresh cilantro
For the dressing:

Juice of 2 limes

2 tbsp olive oil

1 garlic clove, minced

Salt and pepper to taste

¼ tsp chili flakes (optional for heat)
Instructions
1️⃣ Prepare the ingredients:
Dice the avocado, halve the cherry tomatoes, dice the cucumber, and thinly slice the red onion. Place all in a large mixing bowl.
2️⃣ Add the shrimp:
Add cooked shrimp to the bowl. If using frozen shrimp, thaw and pat dry before adding.
3️⃣ Mix the dressing:
In a small bowl, whisk together lime juice, olive oil, minced garlic, salt, pepper, and chili flakes (if using).
4️⃣ Combine everything:
Pour the dressing over the salad and gently toss to combine, making sure the avocado stays intact.
5️⃣ Garnish and serve:
Top with fresh chopped cilantro and serve immediately, or chill for 10 minutes before serving for an extra-refreshing bite.
