For the Cheesecake Filling:

  • 8 oz cream cheese, softened

  • 1/4 cup granulated sugar

  • 1 teaspoon vanilla extract

  • 1/2 cup whipped topping (or heavy cream, whipped)

  • 1 tablespoon powdered sugar (optional, for extra sweetness)

For the Eggroll Bites:

  • 10 eggroll wrappers (found in the frozen or international section)

  • 1 cup fresh strawberries, diced

  • 1 tablespoon granulated sugar (for strawberries)

  • 1 cup vegetable oil (for frying)

  • Powdered sugar, for dusting

  • Additional fresh strawberries, for garnish


Instructions

1️⃣ Prepare the Strawberry Filling:

  • Dice the fresh strawberries and toss them with 1 tablespoon of granulated sugar. Let them sit for about 10 minutes to release some of their juices. Set aside.

2️⃣ Make the Cheesecake Filling:

  • In a medium bowl, beat together the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.

  • Fold in the whipped topping (or whipped heavy cream) to give the filling a light, fluffy texture.

  • Taste the mixture and add powdered sugar for extra sweetness if desired.

3️⃣ Assemble the Eggroll Bites:

  • Place the eggroll wrappers on a clean surface, one at a time. If you’re using square wrappers, rotate them so that they look like diamonds (this makes rolling easier).

  • Spoon about 1-2 tablespoons of the cheesecake mixture into the center of each eggroll wrapper.

  • Add a few pieces of the sugared strawberries on top of the cheesecake mixture.

  • Carefully fold the bottom of the wrapper over the filling, then fold in the sides, and roll tightly to seal the eggroll bite. Use a bit of water on the edge of the wrapper to seal it.

4️⃣ Fry the Eggroll Bites:

  • Heat vegetable oil in a deep frying pan or large skillet over medium heat. The oil should be hot but not smoking (around 350°F/175°C).

  • Gently lower the eggrolls into the hot oil, frying a few at a time, and cook for about 2-3 minutes on each side until golden brown and crispy.

  • Use tongs or a slotted spoon to remove the eggrolls from the oil and place them on a paper towel-lined plate to drain any excess oil.

  • Once the eggroll bites are fried and drained, dust them with powdered sugar for an added sweet touch.
