Description

This Sweet Hawaiian Crockpot Chicken is a tropical-inspired dish that’s as easy as it is delicious. With tender chicken simmered in a sweet and savory pineapple-soy sauce blend, combined with vibrant bell peppers and juicy pineapple chunks, it’s a flavor-packed meal the whole family will love. Serve it over rice for a warm, comforting dinner that basically cooks itself!

Ingredients

Scale
  • 2 lbs boneless, skinless chicken thighs or breasts

  • 1 cup pineapple juice

  • ½ cup brown sugar

  • ½ cup soy sauce

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 cup pineapple chunks (fresh or canned, drained)

  • 2 cloves garlic, minced

  • 1 tbsp cornstarch + 2 tbsp water (optional, for thickening)

  • Cooked white rice, for serving

  • Green onions or sesame seeds for garnish (optional)

Instructions

1️⃣ Prep the chicken: Place the chicken thighs or breasts in the bottom of your crockpot.

2️⃣ Mix the sauce: In a bowl, combine pineapple juice, brown sugar, soy sauce, and minced garlic. Pour over the chicken.

3️⃣ Add veggies and fruit: Scatter sliced bell peppers and pineapple chunks over the chicken and sauce.

4️⃣ Cook: Cover and cook on low for 5–6 hours or high for 3–4 hours, until the chicken is fully cooked and tender.

5️⃣ Optional thickening: If you’d like a thicker sauce, mix cornstarch and water in a small bowl. Stir into the sauce during the last 20–30 minutes of cooking.

6️⃣ Serve: Shred or slice the chicken, and serve over rice. Garnish with green onions or sesame seeds if desired.

Notes

  • Chicken thighs are preferred for tenderness, but breasts work well too.

  • Customize the veggies: Add carrots, onions, or even snap peas for extra variety.

  • Leftovers reheat beautifully—store in an airtight container for up to 3 days.
