For the beef bites:

  • 1 ½ pounds sirloin or ribeye steak, cut into 1-inch cubes

  • Salt and black pepper, to taste

  • 2 tablespoons olive oil

  • 3 tablespoons unsalted butter

  • 4 cloves garlic, minced

  • 1 tablespoon chopped fresh parsley (optional)

For the mashed potatoes:

  • 2 pounds Yukon gold or russet potatoes, peeled and cubed

  • 4 tablespoons butter

  • ½ cup milk or heavy cream (more as needed)

  • Salt and pepper, to taste

Instructions:

Place cubed potatoes in a large pot and cover with cold, salted water. Bring to a boil and cook until fork-tender. Drain well.

Mash the potatoes with butter and milk (or cream) until smooth and creamy. Season with salt and pepper to taste. Cover to keep warm.

Season steak cubes with salt and pepper.

Heat olive oil in a large skillet over high heat. Add steak in a single layer (in batches if necessary) and sear for 1–2 minutes per side until browned. Do not overcrowd the pan. Transfer to a plate.

Reduce heat to medium. Add butter to the skillet. Once melted, stir in garlic and cook for 30 seconds until fragrant.

Return beef bites to the skillet and toss in the garlic butter. Cook for 1–2 minutes more to coat and warm through. Sprinkle with chopped parsley if desired.

Spoon mashed potatoes onto plates and top with garlic butter beef bites. Serve immediately
