For the Fritter Bites

  • 1 cup all-purpose flour

  • 2 tbsp granulated sugar

  • 1½ tsp baking powder

  • ⅓ cup milk (whole or 2%)

  • 1 tsp vanilla extract

  • 1 cup diced peeled apple (about 1 medium Granny Smith or Honeycrisp)

  • 2 tbsp unsalted butter, melted

  • Oil, for frying (vegetable or canola)

For the Vanilla Glaze

  • 1 cup powdered sugar, sifted

  • 23 tbsp milk

  • ½ tsp vanilla extract


Instructions

1️⃣ Prep your apples:
Peel and dice one medium apple into small, roughly ¼” pieces. Toss with a pinch of cinnamon and set aside.

2️⃣ Mix dry ingredients:
In a large bowl, whisk together flour, granulated sugar, baking powder, cinnamon, and salt.

3️⃣ Combine wet ingredients:
In a separate bowl, whisk milk, egg, vanilla extract, and melted butter until smooth.

4️⃣ Make the batter:
Pour the wet mixture into the dry ingredients and stir just until combined. Gently fold in the diced apples—do not overmix, or the bites will be dense.

5️⃣ Heat the oil:
In a heavy-bottomed pot or deep skillet, pour oil to a depth of about 1½” and heat over medium to 350 °F (use a thermometer if you have one). The oil should shimmer but not smoke.

6️⃣ Fry the bites:
Using a small cookie scoop or two spoons, drop 1–inch mounds of batter into the hot oil, working in batches of 6–8 to avoid crowding. Fry for 2–3 minutes per side, until deep golden brown and puffed.

7️⃣ Drain:
Transfer fritter bites to a paper-towel–lined plate to drain excess oil.

8️⃣ Prepare the glaze:
While the bites cool slightly, whisk powdered sugar with 2 tbsp milk and vanilla extract until smooth. Add more milk (up to 3 tbsp total) to reach a drizzle-friendly consistency.

9️⃣ Glaze & serve:
Place the warm bites on a serving platter and drizzle generously with vanilla glaze. Serve immediately for best crisp-soft contrast.

  • Apple Variations: Try sweet Gala or tart Braeburn apples. Dicing smaller yields evenly crisp bites.
