Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
In a skillet, cook the ground beef, diced onion, and minced garlic over medium heat until the beef is browned and fully cooked. Drain any excess fat.
Add salt, black pepper, paprika, ketchup, mustard, and sour cream to the skillet, stirring to combine everything well.
Spread the beef mixture evenly across the bottom of the prepared baking dish, then sprinkle 1 ½ cups of shredded cheddar cheese over the beef.
Arrange the frozen French fries in a single layer on top of the cheese.
Bake in the preheated oven for 30–35 minutes, or until the fries are golden and crispy.
After that, sprinkle the remaining cheese on top and bake for an additional 5 minutes until melted.
Optionally, garnish with diced pickles and chopped green onions before serving hot.
