- 1/4 cup milk (plus splash for eggs)
- 1/2 pound breakfast sausage (turkey or beef)
- 1 tablespoon butter (optional, if needed for gravy)
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt (to taste)
- 1/2 teaspoon black pepper (to taste)
- 8 slices mild cheddar cheese (or cheese of choice)
In a skillet, cook the sausage until fully browned and crumbly. Remove and set aside, reserving about 1/4 cup of sausage drippings.
To the drippings, add flour and cook over medium heat, stirring constantly, until golden (5–10 minutes). Slowly whisk in milk and simmer until thickened. Season with salt and pepper.
While the gravy simmers, lightly toast the English muffin halves.
