Ingredients
  

  • 4 medium potatoes, diced
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • ½ cup milk
  • ½ cup cooked chicken, chopped (optional)
  • ¼ cup green onions or chives, chopped
  • 2 tablespoons butter
  • Salt and pepper, to taste

Instructions
 

  • In a medium bowl, whisk together the eggs, milk, salt, and pepper until smooth and well combined.
  • In a large skillet, melt the butter over medium heat. Add the diced potatoes and cook until they are tender and lightly browned, about 10-15 minutes.
  • If using, add the cooked chicken to the skillet and stir to combine, heating through for a couple of minutes.
  • Pour the egg mixture over the potato and chicken mixture in the skillet. Cook gently, stirring occasionally, until the eggs are scrambled and fully cooked.
  • Remove from heat and sprinkle the shredded cheddar cheese and chopped green onions or chives over the top. Serve warm.
