Ingredients
  

  • 1 1/2 pounds ground chicken thighs
  • 2 scallions, finely chopped
  • 1 cup shredded cheese (Cheddar, Gouda, or Provolone)
  • 1/4 cup mayonnaise
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 large avocado, sliced
  • 1 ear fresh corn, kernels removed
  • 1/8 cup chopped fresh cilantro
  • 1/2 tablespoon olive oil
  • salt and black pepper, to taste
  • 1/2 lime, juiced

Instructions
 

  • Combine ground chicken, shredded cheese, scallions, mayonnaise, salt, and black pepper in a medium mixing bowl. Mix thoroughly until the ingredients are evenly blended.
  • Portion out 1/2 cup of the chicken mixture and shape it into round patties of uniform size.
  • Grill the patties on an outdoor grill or a grill pan over medium heat for about 5 minutes on each side, or until they are fully cooked through.
  • While the patties are grilling, carefully use a sharp knife to cut the kernels off the corn cob. In a mixing bowl, combine the corn kernels, sliced avocado, and cilantro. Drizzle the mixture with olive oil and lime juice, season with salt and black pepper, and mix gently.
  • Place the avocado corn salsa on top of the cooked chicken patties and serve immediately.
