- 1 1/2 pounds ground chicken thighs
- 2 scallions, finely chopped
- 1 cup shredded cheese (Cheddar, Gouda, or Provolone)
- 1/4 cup mayonnaise
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 large avocado, sliced
- 1 ear fresh corn, kernels removed
- 1/8 cup chopped fresh cilantro
- 1/2 tablespoon olive oil
- salt and black pepper, to taste
- 1/2 lime, juiced
Combine ground chicken, shredded cheese, scallions, mayonnaise, salt, and black pepper in a medium mixing bowl. Mix thoroughly until the ingredients are evenly blended.
Portion out 1/2 cup of the chicken mixture and shape it into round patties of uniform size.
Grill the patties on an outdoor grill or a grill pan over medium heat for about 5 minutes on each side, or until they are fully cooked through.
