Start by cutting your fresh pineapple into 1/2-inch thick rings, ensuring they have a flat surface for even frying. Place the rings on a plate and set aside.
In a mixing bowl, combine the flour, sugar, baking powder, salt, and ground cinnamon. Make a well in the center, then add the egg and milk, mixing until the batter is smooth.
In a fryer or a deep pot, pour in the vegetable oil and heat it to 375°F (190°C). It’s best to use a thermometer to check the temperature accurately.
Take each pineapple ring and dip it into the batter, making sure it is fully coated. Allow any excess batter to drip off before placing it in the hot oil.
Gently place the battered rings into the hot oil, frying them in batches. Cook for around 2 minutes on each side or until they turn a golden brown color.
Once cooked, remove the fritters from the oil and let them drain on paper towels. While they are still warm, sprinkle them with the cinnamon and sugar mixture.
