  • 1 cup All-purpose flour
  • 1/4 cup Granulated sugar
  • 1 tablespoon Baking powder
  • 1/4 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 1 large Egg
  • 1/2 cup Milk
  • 1 whole Fresh pineapple
  • 2 cups Vegetable oil
  • 1 tablespoon Additional cinnamon and sugar

Instructions
 

  • Start by cutting your fresh pineapple into 1/2-inch thick rings, ensuring they have a flat surface for even frying. Place the rings on a plate and set aside.
  • In a mixing bowl, combine the flour, sugar, baking powder, salt, and ground cinnamon. Make a well in the center, then add the egg and milk, mixing until the batter is smooth.
  • In a fryer or a deep pot, pour in the vegetable oil and heat it to 375°F (190°C). It’s best to use a thermometer to check the temperature accurately.
  • Take each pineapple ring and dip it into the batter, making sure it is fully coated. Allow any excess batter to drip off before placing it in the hot oil.
  • Gently place the battered rings into the hot oil, frying them in batches. Cook for around 2 minutes on each side or until they turn a golden brown color.
  • Once cooked, remove the fritters from the oil and let them drain on paper towels. While they are still warm, sprinkle them with the cinnamon and sugar mixture.
  • Serve the fritters warm on a plate, and consider pairing them with coconut ice cream for an extra tropical treat.
