Instructions
 

  • In a saucepan, combine the granulated sugar, heavy cream, light corn syrup, and salt. Stir the mixture over medium heat until the sugar has completely dissolved.
  • Continue stirring as the mixture reaches a rolling boil and cook it until it reaches the soft ball stage, which is around 234°F to 240°F.
  • Once the mixture has reached the desired temperature, remove it from heat and incorporate the vanilla extract, stirring well to combine.
  • Allow the mixture to cool for a few minutes, then butter your hands and the working surface.
  • Pour the mixture onto the buttered surface and let it cool until it is safe to handle, approximately 10-15 minutes.
  • When it is cool enough, knead and stretch the candy until it becomes smooth, then shape it into your desired forms.
