Shrimp Dirty Rice Skillet Delight

Ingredients
  

  • 1 lb large shrimp, peeled and deveined
  • 1/2 lb ground beef
  • 1 cup long-grain rice, uncooked
  • 2 1/4 cups chicken broth
  • 1 green bell pepper, diced
  • 1 small red bell pepper, diced
  • 1 medium onion, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil, divided
  • 1 tsp smoked paprika
  • 1 tsp Cajun seasoning
  • 1/2 tsp thyme
  • Salt and black pepper, to taste
  • 2 tbsp fresh parsley or chives, chopped, for garnish

Instructions
 

  • Heat 1 tbsp olive oil in a large skillet over medium heat. Add shrimp, season with Cajun seasoning, and cook 2–3 minutes per side until pink and slightly charred. Remove and set aside.
  • In the same skillet, add ground beef and cook until browned, breaking it into crumbles. Remove and set aside with the shrimp.
  • Add the remaining olive oil, onion, celery, bell peppers, and garlic to the skillet. Cook 4–5 minutes until softened.
  • Stir in uncooked rice, paprika, thyme, salt, and pepper. Toast rice for 2 minutes, stirring often.
  • Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes until rice is tender.
  • Return cooked ground beef and shrimp to the skillet. Toss gently to combine and heat through.
  • Garnish with chopped parsley or chives before serving.
