Ingredients
  

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 16 ounces cream cheese, softened
  • 3/4 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 1/2 cups strawberry pie filling
  • 1/2 cup crushed golden cookies (like vanilla wafers)
  • 2 tablespoons melted butter
  • 1/4 cup white chocolate, melted (for drizzle)

Instructions
 

  • Preheat the oven to 325°F (160°C). Line a 9x9-inch baking pan with parchment paper.
  • In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom of the prepared pan to form a crust. Bake for 8 minutes, then allow it to cool.
  • In another bowl, beat the softened cream cheese and sugar together until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until everything is combined.
  • Pour the cheesecake mixture over the cooled crust and smooth the top. Bake for 30–35 minutes, or until the cheesecake is just set. Let it cool completely, then refrigerate for at least 3 hours.
  • After the cheesecake has chilled, spread the strawberry pie filling over the top.
  • In a small bowl, mix the crushed golden cookies with the melted butter, then sprinkle the mixture evenly on top of the strawberry layer.
  • Drizzle the melted white chocolate over the cheesecake before cutting it into chunks.
