- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
Wet Ingredients:
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
Add-ins:
- 1 medium apple, peeled and finely grated
For Cooking:
- Butter or oil for greasing the pan
Instructions
1️⃣ Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon (if using).
2️⃣ Prepare wet ingredients: In another bowl, beat the egg, then mix in the buttermilk and melted butter.
3️⃣ Combine: Pour the wet mixture into the dry ingredients and gently stir until just combined. Be careful not to overmix—lumps are okay!
4️⃣ Add apple: Fold in the grated apple evenly throughout the batter.
5️⃣ Preheat skillet: Heat a nonstick skillet or griddle over medium heat. Lightly grease with butter or oil.
6️⃣ Cook pancakes: Pour about 1/4 cup of batter per pancake onto the skillet.
7️⃣ Flip when ready: Cook for 2–3 minutes or until bubbles form and edges are set. Flip and cook another 1–2 minutes until golden brown and fully cooked.
8️⃣ Serve: Plate them warm with your favorite toppings like maple syrup, whipped cream, or powdered sugar!
Notes
-
Apple tip: Use a sweet variety like Fuji or Honeycrisp for natural sweetness.
-
Buttermilk swap: No buttermilk? Mix 1 cup milk with 1 tbsp lemon juice or vinegar and let sit for 5 mins.
-
Don’t overmix: A few lumps in the batter keep pancakes fluffy.
-
Make ahead: Grate apple just before adding to prevent browning.
-
Freezer friendly: Let pancakes cool, then freeze with parchment between layers.
