Description

Strawberry Cheesecake Quesadillas are a delightful fusion of classic Mexican and traditional American desserts, combining the crisp, savory texture of quesadillas with the sweet, creamy richness of cheesecake.


Ingredients

1/2 cup Cream Cheese, softened
2 tbsp Sugar
1/2 tsp Vanilla Extract
1/2 cup Strawberries, diced
4 Tortillas, 6 inch
2 tbsp Butter, softened
1 tsp Sugar
1/2 tsp Cinnamon
Strawberry sauce for dipping

Instructions

Add the softened cream cheese, sugar, and vanilla to a mixing bowl and beat together until smooth.
Dice strawberries and add them to the bowl, gently fold them in until combined.
Spread half of the strawberry cream cheese mixture on a tortilla.
Next, add 1 teaspoon of butter to a pan and heat to medium-high. When the butter is melted, lay the tortilla in the pan, cream cheese side up.
Spread 1 additional tsp of butter on the second tortilla and lay on top of the cream cheese, butter side up.
Cook both sides for 2-3 minutes each or until crispy.
Mix together the cinnamon and sugar and sprinkle on top of the finished cheesecakeadilla.
Repeat for the second quesadilla (or use a griddle to make them at the same time).
Remove from heat and let sit for 2 minutes, then slice and serve with strawberry sauce.
